Ever since Ruby’s Bar opened, guests have enjoyed our signature ‘Rick Stein Collins’ a refreshing twist on a classic. The original recipe was created by Mr Lyan, one of the world’s most influential and acclaimed bar owners. Over time, the recipe has evolved and
changed, now focusing on simplicity and minimalism. Each ingredient in this version is carefully chosen to let Rick Stein Tarquin’s Gin shine.

Follow our simple recipe below to make one up at home and bring a taste of the coast to your glass.

You’ll need

35ml Tarquin’s Rick Stein Gin.
25ml Home-made clarified pineapple cordial.
1x drop Ms. Better’s bitters – Star Anise & Pineapple bitters.
Top up with Fever Tree Lemon Tonic.
Shiso leaf garnish.

Tropical / Fresh / Long

Pour all the ingredients in a frozen or chilled glass over a block of ice or ice cubes and give it a gentle stir and garnish with a small handful of shiso leaf.
