Rick Stein x Fortnum & Mason at The Royal Exchange
This summer, we welcomed guests to the heart of London at the Royal Exchange for a limited time celebration of The Seafood Restaurant’s 50th year, brought to life in collaboration with Fortnum & Mason. From 5th June until 5th August this collaboration brought together two British brands with a shared love of great food and drink experiences and warm hospitality, inviting diners to indulge in a menu of Rick’s classics – simple, seasonal and unmistakably special. It was a menu shaped by five decades of memories, stories and signature dishes, served in one of London’s most beautiful dining rooms.
The Menu
We enjoyed the freshest Cornish catch in the heart of the city. Rick and Jack had selected firm favourites from our menus, from the early days in 1975 to present day dishes, paired with Fortnum & Mason’s renowned service and some special wines – an experience guests did not want to miss.
Fish and shellfish soup A rich bouillabaisse-inspired soup, one of Rick’s first hits from the early Padstow days.
Hot shellfish with parsley, chilli, olive oil, garlic and lemon, simply served and full of flavour.
Grilled Cornish lobster, served with fines herbes sauce.
Turbot with hollandaise sauce, “a simple and probably a nicer way of eating this wonderful fish than anything more elaborate.” Rick
Hot chocolate fondant, melts in the middle for a messy finale.
Rick’s dishes were served alongside the elegant seafood menu of Fortnum & Mason’s Executive Chef Julien Lancrume. Guests enjoyed Portland dressed crab, English asparagus with herb vinaigrette, and the famed Royal Exchange caviar trolley, featuring blinis, baked new potatoes, scrambled eggs and a choice of rare sturgeon caviars.
Tucked under the grand arches of The Royal Exchange, Fortnum’s restaurant is a calm, elegant hideaway just moments from Bank. Whether you dropped in for a midweek treat, lingered over a long lunch or met with friends for a glass of something cold, it was a summer moment worth savouring.

What began in 1975 as a shared dream and a deep love for fresh, local seafood has grown into something truly special, thanks to the support of every guest who’s dined with us over the decades.
As part of this golden anniversary, we’re thrilled to be sharing the celebration with Fortnum & Mason – bringing a taste of our Cornish story to the heart of London. It’s a wonderful way to mark this moment, reflecting on how far we’ve come and looking ahead to what’s next.
