An update from Jack Stein
Recently, we’ve been getting ready for the busy season including planning and launching our Summer of Shellfish which celebrates a whole host of species – including Cornish lobster and chips, on throughout the summer, and lots of specials too. I’ve also been putting together the menu for a series of wine dinners with Charlie in the autumn; we’re very happy with the final pairings (find out more here). I do the food, he does the wine, we do the chat. I’m also looking forward to demoing at the Rock Oyster Festival at the end of the month – I hosted the event last year and loved the atmosphere.
As some of you may know, I spent the early years of my chef life in the kitchens at our café and bistro, as well as The Seafood, – learning the ropes and dad’s recipes. Two great restaurants that I’m currently looking to recruit head chefs to lead the back of house teams. Do get in touch if this could be you or you know someone who’d love a new challenge in Padstow. Cooking with the Stars is currently airing on ITV and I’m very happy to have been in every season as a chef mentor. It was amazing to spend time with former World Champion boxer Chris Eubank – I taught him a lot about cooking, and he taught me a lot about life! You can watch the series so far here.
In August, I’m doing a One Mile Menu feast event with my friend and a former chef from the business, Ross Geach, at his kitchen garden overlooking the estuary. We will be cooking up some amazing shellfish dishes alongside produce from the farm.
I have also been following in dad’s footsteps by swimming in the sea every morning and I can understand why he’s been doing it for the last 20 years. After a few months, I’m hooked.
