Spend the evening with Jack Stein and Laura McKay, beer sommelier in training, from St Austell Brewery celebrating five fab beers and dishes, paired to perfection.

Jack x St Austell Brewery’s sell-out event at The Cornish Arms is back for another year as Jack collaborates with St Austell Brewery, a true Cornish gem, to create a memorable evening of Cornish food and beer at our cosy pub.

The exclusive 5 course menu has been created to complement St Austell Brewery’s finest brews, expect everything from familiar favourites like a crisp and refreshing lager to exclusive brews, including a Belgian-inspired Tripel. The evening’s focus is on good food and beer, and great conversation with all guests seated in a communal style.

St Austell’s Brewery is one of Cornwall’s oldest businesses. Founded in 1851 and still family-owned today it’s the largest independent wholesale drinks distributors in the South West with more than 180 pubs and supplying many of the UK’s pubs, bars and supermarkets, including our restaurants.

Fried Cornish Sole with Tartare Sauce
Korev Lager

Begin your evening with the crisp freshness of a Korev Lager, a perfect complement to the delicate, flaky texture of fried Cornish Sole.

Mussels with Wild Garlic and Cider
Tribute Pale Ale

Hicks beer introduces a robust note to tender Cornish mussels, while the wild garlic and cider sing of spring.
‘Wild garlic is finally here, the first shoots are out and this heralds the start of Cornish spring time. Last year we put this dish on at The Cornish Arms where it grows just down the road. This paring with cider and west country mussels is as local as a dish can get.’ – Jack

Cornish Fish Stew with Fried Coombeshead Farm Sourdough
Hicks Strong Ale

Dive into the heart of Cornish tradition with Hicks beer and a hearty fish stew. Inspired by Rick’s experiences on the Lizard Peninsula, this dish captures the essence of coastal living. The rich, savoury notes of Proper Job accentuate the medley of flavours in the Cornish fish stew, accompanied by the perfect crunch of fried Coombshead sourdough.

Rhubarb Fool with Ginger Fairings
Big Job Double IPA

Big Job balances the tartness of rhubarb and the subtle sweetness of the fool adding a layer of complexity to your dessert.

5-Year-Old Davidstow with Beetroot Chutney
Bad Habit Belgian-style Tripel

Raise a glass to the grand finale – a cheese course fit for connoisseurs. Bad Habits beer sets the stage for the rich, aged perfection of 5-year-old Davidstow cheese. Topped with a beetroot chutney, of course.

For Jack, it’s all about the food – working with suppliers to create the best menus possible for our restaurants.

Jack kicked off his career working as a kitchen porter during the school holidays, and at 16 tried his hand at front of house, working as a waiter throughout the remainder of his professional education. His heart was set on cooking though, and he re-entered the family business after working as a chef at restaurants across the world, including La Régalade in Paris, before extensive travels to Australia, the Far East and Japan. Jack has been Chef Director of our restaurants since 2017, overseeing every menu.

The Cornish Arms is a local village pub with good real ales and simple, classic pub menu where everyone is welcome. If a few quiet pints are what you fancy, pull up a stool in our drinkers’ bar for a very pleasing time indeed.


World on a Plate, Jack’s cookery book, is a collection of recipes inspired by his travel.

Showcasing the finest produce from around Britain it features recipes inspired by his travels far and wide, as well as over 15 years of cooking experience here in the UK. You can look forward to trying out 100 of Jack’s newest recipes including lamb leg with braised chicory, white miso cream and onion, Nasi goreng, pineapple tarte tatin and lots more.
