For this late spring into early summer course, we’ll be working with the freshest flat fish, round fish, and shellfish—whatever’s just been landed and is at its very best. To accompany this wonderful Cornish seafood, we’ll be using a selection of beautiful local vegetables, bringing the flavours of the season to life on your plate.

Throughout the day, you’ll pick up a range of essential seafood skills, from fish filleting and shellfish preparation to making sauces and working with seasonal produce.
