This autumn, the sibling duo invite you to join them for a wine dinner, where they’ll showcase their insider knowledge with a five course menu of classic dishes from Jack and carefully curated wine pairings from Charlie.

ChalkStream Trout Tasting Menu with Hattingley Valley
Celebrate the flavours of local produce as our Head Chef, Chris, crafts a special tasting menu featuring four courses using Chalk Stream Trout, alongside a glass of Hattingley Valley Wines, Classic Reserve NV.
ChalkStream trout has a delicate, clean, and mildly sweet flavour. The taste is subtle and refined, less “fishy” than many other types of trout and fish. This can be attributed to the clear, mineral-rich waters of the chalk streams, which provide the perfect environment for the trout.
Arthur from ChalkStream Trout will be joining us where he gets to share stories and insights into their brand and wonderful product. Oliver from Hattingley Valley, a local vineyard, will also be attending to talk about their sparkling wine, which we think is the perfect pairing.
Sat on a communal style table, look forward to an evening of fab food for £55.

SMOKED TROUT WITH SOURDOUGH
Hand filleted, pin boned and trimmed, before being dry cured in salt and demerara sugar and traditionally kiln smoked for 8-10 hours over sustainably sourced oak chippings. The smoked fillets are matured for several days in a Himalayan salt chamber to produce an exceptional texture and depth of flavour.
HOT SMOKED TROUT PÂTÉ
Hot smoked trout hand filleted before being dry cured in salt and demerara sugar. The fillets are then traditionally hot kiln smoked over sustainably sourced oak chippings to produce a deliciously flavoured cooked smoked trout , which we then turn into a pate.
PONZU OF TROUT WITH MOOLI
Trout Ponzu with pink grapefruit, mooli and chervil, a Japanese style dressing, made with mirin, rice wine vinegar and soy
PAN-FRIED TROUT WITH SUN-DRIED TOMATO CHUTNEY
Fillets from a fresh locally farmed trout, pan fried with a tomato chutney.
