50th Anniversary Chefs’ Dinner
We’re continuing to celebrate half a century since we first opened the doors to The Seafood Restaurant in Padstow. It’s a milestone that’s brought back a flood of memories, of the people, dishes and stories that shaped what we do. And now, we’d love to invite you to be part of one very special evening.

On Thursday 25th September, we’re gathering some of the legendary chefs who’ve helped define our kitchen over the last 50 years. They’ll be returning for one night only to cook alongside Head Chef Pete Murt and the team, each contributing a dish that tells part of our story, and theirs.
We’re delighted to welcome back Nathan Outlaw, Stephane Delourme, Paul Ripley, Stuart Pate and Roy Brett, each with their own chapter in our history, each cooking a favourite course. And as the dinner draws to a close, Rick and Ed will be stepping behind the decks, transforming the restaurant into a disco to see the night out with music, laughter and a few questionable dance moves.

Meet your Chefs…

Stephane Delourme
Stephane spent around two decades as Head Chef at The Seafood Restaurant, bringing a touch of northern French flair and seafood cookery obsession to the Cornish coast. Originally from Brittany, he trained in Paris and worked in top London kitchens before settling down in Padstow. Stephane’s cooking blended French technique with a deep respect for local seafood and his warmth, skill and generosity made a lasting impression on everyone he worked with and welcomed to dine in The Seafood Restaurant. He now runs pop-ups and works on freelance projects around the world – his legacy is very much part of our story.

Paul Ripley
Paul spent years in the kitchen here at The Seafood Restaurant, Rick Stein’s Café and down in Falmouth too, perfecting his craft and developing a real love for fresh, local produce. You’ll recognise him from some of Rick’s first TV series, including Taste of the Sea. He later opened his own Michelin-starred spot in Cornwall, where his cooking was all about clean flavours and seasonal ingredients. Paul’s food has always had that lovely mix of classic technique and unfussy charm.

Roy Brett
Roy was our first Executive Chef, starting in the early 2000s when Rick’s TV career was accelerating. Beforehand he’d worked with a great friend of Rick’s, Mark Hix – so came with a serious seafood pedigree. The draw of Scotland called him home after 7 years, and he opened Ondine in Edinburgh. A place that’s become a bit of an institution for brilliant, sustainable Scottish seafood, winning Best Restaurant in Scotland in 2019.

Nathan Outlaw
Nathan Outlaw is a name that sits alongside Rick here in Cornwall as a champion of all things seafood. Early in his career, he moved down to Padstow to gain experience at The Seafood Restaurant, where his love for fish and shellfish really took off. Since then, he’s gone on to open his own restaurants up the coast in Port Issac and beyond, earning Michelin stars for his beautifully precise cooking. Nathan lets the freshest seafood shine on the plate and his recipes can be found in his various cookbooks.

Stuart Pate
Stuart spent nearly two decades as Head Pastry Chef at The Seafood Restaurant, joining the team in 2003. He was best known for creative desserts, fantastic chocolate work, pastries and breads, and was also a big part of setting up Stein’s Patisserie in Padstow. In 2022, Stuart moved on to become Executive Pastry Chef for Nathan and also shares his skills as a lecturer at Penwith College. Though he’s left The Seafood Restaurant, his influence on the sweet side of the menu definitely lives on.
