There are just four things you need to remember when balancing the flavour of a sauce, stew, curry, gravy or anything else with layers of flavour – sweet, salty, sour (acidic), and savoury (umami). Like most things in the kitchen, striking the perfect balance of these four will come with practise – but we bet you’ve got at least one of each category already sitting in your cupboard to help. The ingredients to add more flavour to your cooking
Sweet: Maple syrup, honey, sugar, golden syrup, mirin,
Savoury: Soy sauce, fish sauce, Worcestershire sauce, white miso, Parmesan rind,
Acidic: Rice white vinegar, lemon juice, lime juice, red wine vinegar, malt juice, balsamic vinegar
Salty: Sea salt (add this last)
